Dorito chicken
I had to share with you all what I made the other night for dinner. It was Dorito chicken with salsa and sour cream dip and pasta on the side. YES I made chicken with Doritos as breadcrumbs!
You take the Doritos and put them in a blender to make them the consistency of fine bread crumbs. Then you make the chicken like you always do, except that you shouldn't fry it you should bake it. The last thing I did was to grate some cheddar over the top of the chicken. The rotini pasta was simply made with your choice of sauce.My favorites are Garden or Mushroom.
Anyway, I mix the salsa with the sour cream and use it as a dip for the chicken. I discovered this trick one day when I bought premade sour cream flavored salsa. YUMMY. I want to try this one with other flavors of Doritos, though. There are a lot of them to choose from now. I enjoyed the crunch against the texture of the pasta.
Oh and I baked the chicken *boneless* at 350 degrees for about an hour. Covered for all but the last 20 minutes of the baking so that it got just crispy enough and kept the juices.
